Asian Sweet Dish of Carrots (Gajar ke Kheer)


Ingredients:
Carrots - 1 Kg grated finely (Kadukash ke hoye)
Milk - 2 liters
Rice- 1/2 cup soaked for 2 to 3 hours
Sugar- 8 Table spoons
Illachi - 4 to 6
Salt- 1/4 teaspoon
Pista, Almonds, Coconut as required

Method:
Boil Milk, then add Illachi.
on one boil add carrots & rice and let it cook on low flame till rice and carrots are done and mixed well with milk. once its gets thick add sugar, salt, cut almonds and coconut fine slices.
After 5 to 10 minutes, remove from flame.
Dish out, garnish with pista and almonds.
Let it cool and serve :-)

Kalay Channay ke Chat

Ingredients:
1/2 kg kalay channay- washed amd soaked overnight with 1/4 tea spoon baking soda.
In morning wash them and boil them.
2 onions finely chopped
2 green chilli finely chopped
1 tomato finely chopped
1/4 bunch green corrainder leaves finely chopped
1 tea spoon ginger garlic paste
1 1/2 tea spoon salt
1 1/2 tea spoon red chilli powder
1 tea spoon roasted crushed cumin seeds
1/2 tea spoon all spice powder (garam masala)
2 table spoom lemon juice or imlee ke chatni

Method:
Take 1/4 cup oil, heat it.
Add onion, once it is transparent add ginger garlic paste.
Add tomatos, salt, red chili powder, bhoon lain.
Add boiled channay, Cumin powder, garam masala, green chilli- bhoon lain.
In end add lemon juice and green corrainder.

Peshawari Karahi Ghost

One of my Dad's all time fav :-)


Ingredients:

1/2 Kg Mutton
1/4 Kg Tomatos chopped
1 medium onion finely chopped
1 tea spoon ginger garlic paste
1 tea spoon salt
1 tea spoon red chili powder
1/4 tea spoon haldi powder
1 tea spoon black pepper powder ( i prefer freshly crushed)
1 tea spoon roasted cumin (zera) seeds
1 tea spoon all spice powder (garam masala)
1/2 cup Curd (dahi)
6 to 7 green chilies
1/2 cup oil or desi ghee ( I made it in Desi ghee and result was uffffffffffffffffffff tooo Gud MashAllah)

Method:
In karachi take oil, heat it.
Add Ginger Garlic paste after one minute add onions
After 2 to 3 minutes add salt, red chili powder, haldi.
After 2 to 3 minutes add mutton, fry it.
After 5 minutes add tomatos and cover it and cook on low flame till Mutton is done.
Increase the flame it and fry the mutton (bhoon lain achay se)
When mutton & tomato water is dry then add
3 table spoon curd (dahi)
1 tea spoon black pepper
1 tea spoon roasted cumin seeds
1/2 tea spoon garam masala.
and green chilli

Fry it till its done.
Garnish with fresh corriander leaves and finely chopped Ginger in Julian cut.

Serve with Nan :-)

Mashed Potato Sandwitches

Me back after soooooooooo many days :-)
This is one of my fav for emergency serving with Tea :-)
Serve these with Chilli garlic sauce, Garlic Mayo or Green Chatni Thick Raita

Ingredients:
4 medium Boiled Potatos, mash them
2 Green Chilli, finely chopped
1/4 bunch green corriander finely chopped
1/2 tea spoon salt
1/2 tea spoon black peppre
Mix all these.

2 Eggs for coating
Bread Slices as required.

Method:
Remove cormers of bread slices.
Flaten them with roller.
Apply water with finger tips on corners.
Put the above batter on half slice and then close it like book.
press to close edges.
Dip in Egg.
Fry these like French toast with little oil.
You can also deep dry them.

Degi Chicken Qorma

Try this and you will love the result :-)


Ingredients:

Chicken 1 Kg
Desi Ghee 1/2 cup
Black Pepper 6 to 8
Choti Illachi 6
Long 6
Oninions 250 gram cut in slices, fried till golden brown and then crushed.
yougart 250 grams
REd Chilli powder 2 tea spoon
Salt 1-1/2 tea spoon
Corriander powder 1 tea spoon
Ginger Garlic paste 1 table spoon
2 drops of kewra water
1/2 tea spoon garam masala powder
1/2 tea spoon mixture of jyefal, javetri & choti illachi

Method:

Heat Ghee and add black peper, choti illachi and long. after 2 minutes add chicken.
Fry the chicken but don't over cook.
Mix Yougart, Red chilli powder, salt, corriander powder, ginger garlic paste and fried crushed onion.
Once chicken is fried add this mixture and cover the lid and let it cook on low flame.
Once oil start surfacing and all spices are well cooked add kewra water, garam masala powder and mixture of jyefal, javetri & choti illachi.
Cover the lid again leave on low flame for 2 minutes and it's ready.
Garnish and serve :-)

Chocolate Cupcakes

  • 1 1/2 cups (3 sticks) unsalted butter, softened
  • 3/4 cup unsweetened Dutch-process cocoa powder
  • 1/2 cup boiling water
  • 3 1/4 cups sifted cake flour (not self-rising)
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 1/2 cups sugar
  • 4 large eggs, lightly beaten
  • 2 teaspoons pure vanilla extract
  • 1 cup whipping cream
1.Preheat oven to 350 degrees. Line 2 muffin tins with papers. Set aside. Sift cocoa powder into a medium bowl; whisk in boiling water. Set aside to cool.
2.Sift together flour, baking soda, salt and cinnamon into a large bowl; set aside. Put butter into the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until creamy. Gradually mix in sugar until pale and fluffy, 3 to 4 minutes. Add eggs, a bit at a time, mixing well between each addition; mix until well blended. Scrape down sides of bowl to make sure everything is thourghly incorporated. Mix in vanilla.
3.Whisk whipping cream into reserved cocoa mixture. With mixer on low speed, add flour mixture to butter mixture in 3 batches, alternating with the cocoa mixture.
4.Fill muffins cups 2/3 full and smooth tops with an offset spatula. I use a small ice cream scoop for this to ensure equal batter amounts in each cup. Bake, rotating pans halfway through. Cake is finished when you touch it lightly with a finger and it springs back at you or a cake tester inserted into the middle comes out clean, 20 to 30 minutes. Let cool in pans. Decorate with frosting and sprinkle with toasted nuts for an added textureand visual appeal.

Frosting
  • 26 ounces chopped semisweet chocolate or you can use chips
  • 4 cups whipping cream
  • 1 teaspoon light corn syrup
1.Place chocolate and cream in a heavy saucepan. Cook over low heat, stirring constantly with a rubber spatula, until combined and thickened, between 20 and 25 minutes. Increase the heat to medium low; cook, stirring, 3 minutes more. Remove pan from heat.
2.Stir in corn syrup. Transfer frosting to a large metal bowl. Chill until cool enough to spread, about 2 hours, checking and stirring every 15 to 20 minutes. Use immediately.

Carrot Cake to Die For



Recipe submitted for my cake carnival :-)


Yield:  1 (9-inch) tall cake; serves 20-30
  • 4 cups all-purpose flour
  • 4 teaspoons baking soda
  • 1 teaspoon salt
  • 4 teaspoons ground cinnamon
  • pinch of nutmeg
  • 6 large eggs
  • 4 cups sugar
  • 1 1/2 cup vegetable oil
  • 1 1/2 cup buttermilk
  • 4 teaspoons real vanilla extract
  • 5 cups fresh grated carrot
  • zest of one large orange
  • 2 (8-ounce) cans crushed pineapple, drained
  • 7 ounces sweetened, flaked coconut
  • 2 cup chopped walnuts
Line 4 (9-inch) round double deep cakepans with parchment paper; lightly grease and flour paper.
Set pans aside. Stir together first 5 ingredients.
Beat eggs and next 4 ingredients at medium speed with an electric mixer until smooth.
Add flour mixture, beating at low speed until blended. Fold in carrot and next 4 ingredients.
Pour batter into prepared cakepans.
Bake at 350° for 30 to 45 minutes or until a wooden pick inserted in center comes out clean.
Pour Buttermilk Glaze evenly over layers while cake is still hot; cool in pans on wire racks 15 minutes.
Remove from pans, and cool completely on wire racks. Spread Cream Cheese Frosting between
layers and on top and sides of cake. Press chopped pecans on sides of cake and decorate edges with
pecan halves.
-Tips and Tricks: This cake is VERY tall and quite heavy… it will serve many people. If you want to make a smaller version simply half the recipe, use 2 standard 9” cake pans and bake for 25-30 minutes.

Buttermilk Glaze

  • 1  cup  sugar
  • 1 1/2  teaspoons  baking soda
  • 1/2  cup  buttermilk
  • 1/2  cup  butter or margarine
  • 1  tablespoon  light corn syrup
  • 1  teaspoon  vanilla extract
Bring first 5 ingredients to a boil in a heavy sauce pan
over medium-high heat. Boil, stirring often, 4 minutes.
Remove from heat, and stir in vanilla. Pour over hot-
warm carrot cakes while still in pans.

Best Ever Cream Cheese Frosting

  • 2/3 Cups unsalted butter softened
  • 1 1/3 Cup cream cheese softened
  • 2 tsp. vanilla extract
  • 6 Cups unsifted powdered sugar
In electric mixer on low speed, cream butter for
2 minutes. Increase mixer speed to medium and
add cream cheese. Cream together until light
and fluffy. Scraping sides and bottom of bowl to
incorporate all ingredients is important. Reduce
mixer speed to low and add vanilla. Blend until
smooth. Add powdered sugar 1 cup at a time,
mixing after each addition until smooth and creamy

Coffee Walnut Cake

Ingredients:

125 grams butter, at room temperature
125 grams caster sugar
2 eggs
125 grams white flour
1 tea spoon baking powder
2 table spoon coffee, dissolved in ¼ cup water
½ cup walnut halves

For Glaze:

200 grams Butter
200 grams icing sugar

Method:
  1. Beat the butter and sugar together with electric beater and then beat in the eggs, flour and baking powder.
  2. Beat in 1 tbsp of the coffee mixture and then add up to another tbsp little by little until the mixture drops easily off the spoon. Keep the rest of the coffee mixture for the icing.
  3. Stir in half the walnuts, snapping them in half as you drop them into the bowl. Spoon into the tin, level the top and bake for 40 minutes or until a skewer comes out cleanly. Cool.
  4. To make the icing, beat the butter until soft and then beat in 200g icing sugar followed by the remaining coffee mixture, little by little. Stop when you have a depth of color and flavor that you like. If the icing looks a little soft, beat in extra icing sugar.
  5. Cut the cake into 3 slices horizontally and then sandwich the layers together with some of the icing, you need a reasonably thick layer. Ice the top of the cake with the rest of the icing and decorate with the rest of the walnuts.

Tried these last weekend and result was yuumy can be used to serve with tea or add these in simple fried rice :-)

Ingredients for Chicken Marination:
1/2 kg boneless chicken cut into small cubes
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon mustard powder
1 table spoon chilli garlic sauce
1 table spoon lemon juice
1/4 tea spoon ajwain
1 table spoon white flour (meedah)
1/2 teaspoon baking powder.

Method:
Mix all these and leave in fridge atleast for 2 hours.

Ingredients for Liquid Batter:
2 table spoon white flour (meedah)
2 table spoon corn flour
1/2 tea spoon baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1 table spoon chilli garlic sauce
milk as required to form liquid battar of medium consistancy.

Dry Batter:
2 table spoon white flour mixed with 1/4 tea spoon salt and baking powder.

Method:
Dip the marinated chicken in liquid batter, roll in dry batter and deep fry.

Behari Kebab

Ingredients:

Beef undercut meat 1/2 Kg cut in strips
1 tea spoon ginger paste
1 tea spoon garlic paste
1 table spoon crushed pappya taste (alternate is meat tenderizer)
1/4 cup yougart
1/4 cut oil
1 tea spoon red chilli powder
1 tea spoon all spice powder (garam masala)
1 tea spoon salt
2 table spoon crushed fried brown onions

Method:
Mix all ingredients with meat and leave atleast for 4 hours for marination.
Then insert shahslik stick (or small seekh) in each strip in wave style.
Now grill them on grilling pan or BBQ them.
Once cooked give coal smoke (in case of grilling) for awesome smell and taste.
Enjoy :D

Chicken Ginger

This recipe is lil different from traditional recipe as this is with Pakistani touch, watched this one in Farah's shows, tried and it was simply awesome :)

Ingredients:
1/2 boneless chicken cut in strips
1/2 cup Oil (Use ghee for good taste)
3 to 4 tomato (boil them, peel off skin and then form paste)
2 inch Ginger piece cut in julian (lehgth wise)
1-1/2 tea spoon corriander powder
1 tea spoon garlic paste
1 tea spoon all spice powder (Garam Masala)
1 tea spoon red chilli powder
1 tea spoon salt
0.25 Kg (one pau) yougart
4 green chilles

Method:
Heat oil (ghee) then fry chicken till color turns to white (don't overcook).
Add tomato paste, salt & red chilli powder.
Mix garlic & corriander powder in yougart and add it once tomato water is almost dry.
cook on low flame till oil gets seperate then add all spice powder, green chillies & ginger.
Cover the lid and let it cook for 5 to 7 minutes on low flame.

Coffe Cake Icing (Glaze)

Ingredients:

2 to 3table spoon butter
3 table spoon milk
2-1/2 cup icing sugar
1 instant coffee packet

Method:

Melt butter and add milk in it.
Mix Icing sugar & Instant coffee.
Now start pouring hot mixture of butter & milk in icing suagr mixture.
Keep mixing, this should be thick mixture that could stay on cake.
if required add more hot milk.
Apply on cake once its cool down.
Once applied keep in fridge for 15 minutes so that icing is set perfectly.

Coffee Cake (Farah Jehanzeb)

Tried this yesterday for the first time and it was really good :)

Ingredients:

2-3/4 cup white flour (meedah) (1 cup = 8 ounce)
2 eggs
200 grams Butter (melt it)
2 teaspoons of coffee powder
1-1/2 tea spoon baking powder
1/2  tea spoon baking soda
1/2 tea spoon salt
1 cup milk (add i table spoon vinegar in it to make butter milk
1-1/4 cup castor sugar

Method:

Preheat oven @ 180 degree C for atleast 30 minutes
Mix White flour, salt, coffee powder, baking soda & baking powder. sift it once.
Beat Melted Butter & Castor Sugar till fuffy
Add Eggs one by one and beat till mixed.
Add half milk and haly mixture of White Flour beat to mix
Add reamaining milk & white flour mixtute beat again at slow speed till mixed properly.
Make sure coffee granules are no more visible.
Grease baking dish and pour mixture in it.
Bake in preheat oven @ 180 degree C for 35 to 40 Minutes.
Yummy cake is ready :D

Chocolate Icing (Glaze) for Cakes.

Ingredients:

100 gram cooking chocolate
2 table spoon butter
2 table spoon corn syrup
1 tea spoon vanilla essence

Method:

Put all ingredients in a pan and cook till chocolate melts.
Apply on cake once its cool down.

Easy Chocolate Cake

Ingredients:

200 gram Butter
200 gram Castor Sugar
200 gram White Flour (Meedah)
3 table spoon chocolate powder
2 teaspoon baking powder
1 teaspoon vanilla escence
4 Eggs

Method:

Preheat over @ 180 degree cent for atleast 30 minutes
Mix White Flour, Chocolate powder & baking powder. sift them twice.
Beat Butter & Castor Sugar with electric beater till fluffy.
Add eggs one by one & Vanilla Essence. Beat again.
Add White Flour (mixed white chocolate powder & baking powder)
Beat at slow speed till mixed.
Greese baking dish, pour the mixture in it.
Bake it in preheated oven @ 180 degree cent for 35 to 40 minutes.
Yuumy cake is ready :D

Ghulab Jamun



Ingredients:
1/2 cup powdered milk
2 table spoon white flour (Meedah)
1/4 tea spoon baking soda
1 table spoon oil (desi ghee)
2 table spoon yougart (add little by little)

For Shera:
1 cup sugar & 1 cup water, cook till sugar dissolves.

Method:
Mix powdered milk, white flour & baking soda.
add oil and rub the mixture.
start adding yougart & knead the dough with it. Dough will be medium hard.
Leave for 10 minutes then make small balls.
Deep fry these balls till goldem brown
Take them out and directly drop them in shera (Mixture of sugar & water)
leave them there fir atleast 30 minutes.
Take these out in serving dish and decorate with crushed coconut, chopped almonds or pista :)

Irani Kebab (chalu kebab)



Ingredients:

1/2 kg Mince (mutton or beef)
1 table spoon Desi ghee (oil)
1/2 tea spoon black pepper
1/4 tea spoon darchini powder
1/4 tea spoon baking soda
1/2 tea spoon salt
1 medium onion chopped.

Method:

Mix all these well, give shape of any type of kabab (sekh kebab will be good)
Then shallow fry these.
easy to cook and very yummy :)

Chicken Drum Sticks

This is one of my all time famous recipe, follow the instructions and you will end up with yummy drumsticks which everyone will love.

Ingredients:

6 chicken legs
1/2 tea spoon black pepper
1/2 tea spoon chat masala
1 table spoon chinese salt
1/2 tea spoon salt
1 small onion chopped
3 green chili chopped
3 slices of bread (remove corner)

Method:

- Boil the chicken and then remove the meat.
- Mash boiled chicken with hand and add black pepper, chat masala, chinese salt, salt, chopped onion, chopped green chili and white portion of bread slices mashed properly.
- Mix all this well and then coat on bones giving shape of drum stick.

For coating:

 Ingredients:

1 egg
2 table spoon white flour
1/2 tea spoon black pepper
1/2 tea spoon chat masala

Method:
Mix all ingredients then dip the drumsticks in this and deep fry till the coating gets good color.
Enjoy yummy drumsticks

Garlic Fried Rice

Ingredients:

1/2 cup oil
2 Table spoon crushed garlic
1/2 kg rice
2 table spoon soya sauce
1 tea spoon white pepper
2 tea spoon salt (or as per your taste)

Method:

Soak rice for half hour and then boil them.
Heat oil, add garlic and fry till it's golden brown.
Add boiled rice, salt, soya sauce & white pepper
Mix well and yummy rice are ready.
(can also add spring onions to add taste while frying garlic)

Chicken Pakora

Ingredients:

1/2 boneless chicken cut in 1 inch cubes
lemon juice - 2 table spoon
Mutard Paste - 1 tea spoon
Red chili flakes - 1 tea spoon
Cumin seeds - 1 tea spoon
Besan - 4 table spoon
Salt - 1 tea spoon
Ajwain- 1/2 tea spoon
Rice Flour- 2 Table Spoon

Method:
Marinate Chicken with lemon juice, mustard paste, red chili flakes, salt, ajwain, sabat zera.
Leave for half hour atleast
then add besan & Rice flour to form coating if required add some water.
Now deep fry on low flame so that chicken is properly cooked.
Before taking out increase flame so that extra oil is drained.
Sprinke some chat masala before serving.

Cheese Onion Samosa

Ingredients:


For the dough:

1 cup refined flour
Salt to taste
Water as required

For the filling:
1 small bundle green onions, finely chopped
1/2 cup cheese grated
2 green chillies, finely chopped
1 teaspoon oil
Salt to taste
Oil for frying

Method:

For the dough:

Mix all the ingredients for dough and make a soft dough.
Cover and keep aside.

For the filling:
Heat oil in a pan.
Add chopped onions and fry till brown colour.
Add chopped chillies to it.
Fry for 3 – 4 minutes.
Let it cool for some time.
Add grated cheese and salt to the mixture.
Mix well and keep aside.

For the Samosa:
Divide the dough into five portions.
Roll out thin rotis
Warm the rotis for a few seconds on a tawa without oil.
Divide each roti into two parts.
Fill in the mixture and make triangles. Seal the triangles properly.
Deep fry on a medium heat.

Pizza Wheels (Chef Shireen Anwer)

Ingredients for Filling:

1 small Oninon finely chopped
1 small capsicum finely chopped
2 Boiled Eggs
Chedder cheese grated as required
Chili Garlic Sauece as required


Ingredients for Dough:

White Flour 2-1/2 cup
Instant Yeast 1 Table Spoon
Salt 1/2 tea spoon
Castor Sugar 1/2 tea spoon
Egg 1
Oil 4 Table Spoon
2 Table Spoon  powdered Milk

Method:

Knead Dough and leave to rise for 1 hr
Take out knead again and the leave for 15 minutes.
Then Roll it out like Chappati
Spread Chili garlic sauce it evenly cover all
then give layer of chopped onions, Capsicum, Boiled shredded egg and grated cheese.
Then roll it to give shape of Roll.
Brush the upper side of Roll Sprinkle some thyme (Optional)
Preheat Oven @ 200 degree for 15 minutes
Bake for 20 to 25 Minutes
Once baked then light upper grill to give color for 5 minutes.
Take out let it cool for 5 minutes then cut in slices like in picture
Serve Hot :)

It was tooooooooooo Yummy, tried this too today ^_^

Chicken Wings (Kokab Khawajah)



Ingredients:

1/2 Kg wings
1/4 tea spoon salt (for maination)
1/4 cup white Flour (for marination)
1/4 cup Flour (for crust)
2 table spoon besan
1/2 tea spoon baking powder
1/2 tea spoon salt
3/4 tea spoon red chili powder
1/2 tea spoon garam masala
1/2 tea spoon corriander powder
1/4 tea spoon crushed cumin seeds
1/2 cup water.

Method:

Wash & dry wings, marinate them with 1/4 tea spoon of salt and leave for 15 minutes.
Then dust 1/4 cup white flour on wings.

For coating add all other ingredients in a mixing bowl and mix with water to form a thick paste.
Heat Oil, dip chicken wings in coating mixture and then deep fry on medium flame.

Yummy Wings are ready to serve :)
I tried these today and result was awesome :)

Chicken Pie

Ingredients:

1 cup boiled chicken (shredded)
1 cup cabbage (shreded)
1 cup carrot (shreded)
1 small onion (chopped)
23 medium green chillies (chopped)
1 cup cheese (shreded)
½ packet cream
salt to taste or 1/2 tsp
1/2 tsp black pepper

Method:

Take a bowl and add all ingredients in it, but add only 1/2 cup of cheese in it. Mix the batter well.

Take a greased baking tray and pour the mixture in it. Sprinkle the remaining 1/2 cup of cheese over it and bake this batter in oven for about 10 mins in a preheated oven at 160 C.

Check whether it’s cooked or not by pinching a tooth pick in it. If no remains of cream get stuck to it then it is properly cooked.

Take it out from baking tray it will look like as cake.

Malai Chicken Boti



Ingredients:

  • 1/2 Kg Boneless Chicken
  • 1/2 tea spoon salt
  • Hara Masala (One bunch Hara Dhania, 8 to 10 Mint leaves, 3 green chilli blend these all to form a paste add lil water)
  • lemon juice 2 table spoon
  • Ginger Garlic paste 1 tea spoon
  • Kacha Pappya 1 table spoon
  • 2 table spoon fresh Cream
Method:

  • Mix all above ingredients and marinate chicken at least for 1 hour.
  • Then stuff these on shashlik stick
  • Preheat oven @ 180 degree
  • Grease baking tray place them on it and bake till cook.
  • Then give Coal smoke for BBQ taste and Smell.

Cold Coffee

Ingredients:

6 to 8 Cubes Ice
2 Cups Milk
1 Tea spoon Coffee for Mild (1 table spoon for strong)
2 table spoon castor sugar
2 table spoon cream
6 Scoops ice cream.

Method:

Put all ingredients in Blender (ice cream 4 scoops)
Blend It.
Pour out in 2 Glasses and put one scoop each in both glasses
Garnish with Chocolate syrup and sprinkle some coffee powder on it.

Ras Malai


Ingredients:

2 Cup powdered Milk ( I used Nido)
Fresh dairy Milk 2 KG ( don't use milk pack)
2 Cup Sugar
8 to 10 Small Illachi
2 tea spoon baking powder
1 table spoon white flour
2 table spoon melted desi ghee
2 eggs

Method:

Boil Fresh milk, then add Choti Illachi (break open) & sugar and let it cook on lowest possible flame.

Take powdered milk, baking powder, white flour and mix these.

Now add Desi ghee and mix well bu rubbing with finger tips (very Imp step to make them soft)

Now with egg Knead the Dough and keep kneading till oils starts appearing on surface.

Make small balls and add them in boiling milk, cover the lid and let it cook for 5 to 8 minutes

Keep increasing flame to turn the balls, don't use spoon.

When cooked cool it in Fridge and serve Hot :)

Chicken Bread (On Special request of my friends):

Sorry I remember to take picture after eating more than half of it :P

Just follow the procedure as it is and results will be awesome 

Ingredients for Dough:
4 Cup white flour
2 table spoon milk powder
4 table spoon oil
1 table spoon instant yeast
Salt to taste ( this is not in original recipe but I use this)
Luke warm water for Kneading

Method for Dough

Mix white flour, milk powder, instant yeast & salt
Add oil and rub mixture with your finger tips
Then use Luke warm water to knead
Keep it soft.
Grease a container and place dough in it, grease top of dough too.
Cover it and keep it in warm place at least for 30 to 45 Minutes
Once it rise take out knead again
Cover it and leave to rise again

Ingredients for Filling

3 Table Spoon chopped onion
2 Table Spoon oil
6 Table Spoon of white flour
4 Table Spoon of corn flour
10 to 12 table spoon sugar ( I added only 6 Table spoon)
1 tea spoon of salt
1 tea spoon freshly crushed black pepper
½ tea spoon garm masala powder
1 cup milk
One cup boiled & Shredded chicken
2 Table spoon of Ketchup
2 chopped green chilies
Method:

Heat oil add Onion fry till transparent
Add white flour & Corn Flour
Mix Well add sugar and cook for 3 to 4 Minutes
Add salt, black pepper, garm masala and milk
When thick add chicken, ketchup & Green Chili
Mix well cook for 2 to 3Minutes

Let this cool for 15 to 20 Minutes
Now take dough and roll flat like Chapatti
In middle place mixture lengthwise
On both side place equal cuts
Now start closing it by turning in one strip from each side turn by turn on mixture.
Give shape of Fish head on one end and tail on other.
Brush it with egg on top side
Preheat oven @ 180 degree for 15 minutes
Grease baking dish place this bread on it.
Cook for 20 to 25 Minutes
Once cooked light upper grill to give color for 4 to 5 Minutes only
Serve Hot.

Pizza Dough:


Ingredients:

 
White Flour ½ kg

3 Table spoon Oil
Salt to taste

Method:

o Heat oil added onion cook till it’s transparent
o Add ginger garlic paste cook for 1 minute
o Add tomatoes and Salt
o Cook for 3 to 5 minutes then add Ketchup
o Add ½ cup water and cook on low flame.
o When water dries 95% then blend it in blender
o Let it cool, it should be a thick paste
o Can be stored in Fridge for 3 days and freezer for 1 month.

Pizza Sauce 1 (Chef Maeeda)

Ingredients:


Tomatoes ½ Kg roughly chopped
1 small Onion Chopped
Garlic Chopped 1 tea spoon
Ketchup 2 table spoon
Salt to taste
Thyme 1 tea spoon
Oregano 1 tea spoon
Cumin seeds roasted & Crushed ½ tea spoon
Crushed red chili ½ tea spoon

Method:

o Add all these in a pan along with ¼ cup water and cook on low flame
o When water dries 95% then blend it in blender
o Let it cool, it should be a thick paste
o Can be stored in Fridge for 3 days and freezer for 1 month

Fluffy Chicken Omelet:

Ingredients:


1 Egg
1 Table Spoon Milk
½ cup shredded boiled Chicken
½ tea spoon black pepper freshly crushed
1 Tablespoon oil
Salt to taste

Method:

o Separate Egg white and Yolk
o Add milk, salt & black pepper to egg yolk beat it well and add shredded chicken
o Beat egg white till stiff
o Add the egg yolk mixture in egg white and mix well
o Heat oil in pan & pour Mixture
o Cook over low heat till it’s light brown
o Then place on the top grill in Oven on moderate temperature
o Bake till top is firm to touch
o Fold & serve Hot.

Pepper Chicken

Ingredients:


2 Table spoon Oil
1 Kg chicken
Black Pepper freshly crushed 1-1/2 tea spoon
Salt 1-1/2 tea spoon
Soya Sauce 1 Table spoon
BBQ Sauce 1 table spoon
Lemon Juice 1 Table Spoon
Ginger Garlic Paste 1 Table Spoon

Method:


Heat oil, add ginger garlic paste cook for 2 minutes then add chicken and cook till it's light brown.

Than add all above ingredients and cook for 5 to 8 minutes. Add 1 cup water and cook on medium flame till chicken is cooked.

Chicken White Handi

This is something that whenever i tried everyone simply loved it :D

Ingredients:
Boneless Chicken - 1 Kg
Garlic Crushed 1 table spoon
Ginger Crushed 1 table spoon
Salt 1-1/2 tea spoon
Black pepper 1-1/2 tea spoon
White pepper 1/4 tea spoon
4 Green chilli paste
Curd 1/4 Kg
Cream 250 grams
Butter 150 grams
Cooking oil 1/4 cup
1 Table spoon Corriander balls (roast them and grind them)
1 Table spoon Sabar Zera (roast it and grind them)

Method:
Heat oil and half of butter, add ginger and after 2 minutes add garlic cook for 3 to 4 minutes and then add chicken, fru it till it's light brown, then add salt, black pepper, white pepper, fry for 5 minutes add green chilli paste fry for 2 to 4 minutes, add curd and on low flame cover the lid and leave till chicken is properly done. Then add cream cover again for 5 minutes on low flame, the add remaining butter, close the flame and cover the lid. Leave for 5 Minutes.
Garnish with Choppen Hara dhania.

Yummy yummy handi is ready.
For good result cook it in Mitti ke handi :D

Roasted Potatos

Ingredients:

6 ———- medium red potatoes, scrubbed clean, skins on
2 tbsp ———- olive oil
salt as per taste
1/2 tbsp ———- onion powder
1/2 tbsp ———- garlic powder
1/2 tbsp ———- dried oregano, crushed to release flavour
freshly grounded black pepper as per taste
2 tbsp ———- grated parmesan cheese (not the canned stuff)
2 tbsp ———- spoons filely-shredded sharp cheddar cheese

Method:

Arrange the whole red potatoes on a paper towel around the outer edge of the glass turntable in the microwave.
Cook on high for 8-9 minutes. They should still be a bit firm, not soft when you squeeze them. Let cool 10 minutes.
preheat oven to 425-F line a shallow baking sheet with non stick foil. slice the potatoes length wise in half and place cut-side up on prepared baking sheet sprinkle wih olive oil.
Use your finger to spread the olive oil over the top of each potato half so it is completely coated.
sprinkle with saly , onion powder, garlic powder, crushed dried oregano, pepper, Parmesan Cheddar.
Bake for 30 minutes until browned and crispy. Let rest 5-10 minutes before serving.

Honey with watermelon smoothie

Ingredients for Watermelon Smoothie:-
• 1 to 2 cups seedless watermelon chunks
• 1 tbsp honey
• 1 tbsp fresh mint leaves or to taste
• Cinnamon to taste
• Yogurt desired thickness


Watermelon Smoothie Preparation:
1. Puree the watermelon, honey & mint quickly – do not over blend.
2. Pulse in to yogurt & cinnamon just until smooth.

Smoothie banana strawberry

Ingredients
1.5 Cups —- sliced strawberries
1 —- banana
1 tbsp —- orange juice concentrate
1 cup —- milk

Strawberry Smoothie Preparation:
Place strawberries & banana in a blender, food processor.
If using fresh strawberries in place of frozen, add ice at this point.
Top with orange juice concentrate & milk. Puree until smooth.
If using a blender, you may have trouble pureeing the strawberries, especially if they are whole.
Stop the blender.
Remove it from its motor base. Remove the cover & use a spoon to push the strawberries down into the blades.
Replace the cover & puree until smooth.

Mutton Fry

Ingredients:

1/2 kg - mutton, with bones
2 tsp - red chilli powder
2 tsp - ginger garlic paste
1 tsp - tumeric powder
1 tsp - garam masala powder
3 tsp - oil
1 bunch - coriander
1 - onion, sliced

Method

Boil mutton in a pressure cooker with 1&1/2 glasses of water and salt.
Once cooked, remove onto a plate and keep aside for 5 min.
Heat oil in a kadai, add mutton, ginger garlic paste, tumeric powder, red chilli powder, garam masala powder and salt if needed.
Fry till crisp and garnish with coriander leaves and onion before serving.

Chicken Shaslick

Ingredients:

1 Kg. boneless chicken
2 tsp Salt
1 tsp chili (Lal Mirch) powder
2 Green Bell peppers
3 Medium Onions
6 Small green chilies
½ Kg canned whole/diced tomatoes
½ Cup Ketchup
3 tbs. Soy Sauce
3 tbs. Oil

Method:

Cut the chicken into cubes and
fry it in oil on low-medium heat
until the chicken is white. (15 minutes)
Dice the tomatoes if you're using whole ones. Add this to the chicken. Deseed the bell peppers and cut them into 1 inch chunks. Cut the onions into chunks and add these in as well.
Throw in the rest of the ingredients and cook this on low-medium heat for about half an hour or until the bell peppers are slightly soft.
Serve with boiled rice.

CHEESE CHICKEN KEBAB

Ingredients:

Boneless chicken breast, 2 inch cubes 6(100 grams each)
Egg 1
Caraway seeds (shahi jeera) 1/2 tablespoon
Green cardamom powder 1/2 teaspoon
Green chilli paste 1 teaspoon
Ginger paste 1 tablespoon
Garlic paste 1 tablespoon
Fresh coriander leaves 1 tablespoon
Roasted chana dal powder 1/4 cup
Turmeric powder 1/4 teaspoon
Cream 1/4 cup
Thick yogurt 1 1/2 cups
Processed cheese, grated 1 cup
Salt to taste
Black peppercorns, crushed 7-8
Oil to shallow fry

Method:

Break egg into a bowl. Add caraway seeds, green cardamom powder, green chilli paste, ginger-garlic paste, coriander leaves, roasted chana dal powder, turmeric powder, cream and yogurt and mix well. Add cheese, salt, crushed black peppercorns and mix well.

Add the chicken cubes and mix. Set aside to marinate for about half an hour.
String the chicken cubes onto skewers.
Heat a non stick grill pan. Drizzle some oil and place the skewers on it. Shallow fry, turning the skewers from time to time, till the kebabs are golden on all sides.
Cover the pan with aluminium foil to ensure even cooking.

CHOW MEIN

Chicken 1/2kg boiles and pieces karlo iski barik
Cabbage 1cup cut
Carrot 2cup cut
Spring onion 1 cup chopped
Peas 1 cup boiles
Soya sauce 2 tablespoon
salt + chinese salt 1teaspoon
Worcester sauce 2 tablespoon
Noodles 1 cup boiled
oil 1/2 cup

Heat oil and fry chicken and vegetables then add al labove given spices except noodles cook it for 2-3 mins then add noodles and mix well cook for 5mins . tkae it out n serve

Butter Chicken

Ingredients :

1 whole chicken cut up
1 tbsp tandoori masala
1/2 tbsp garam masala (cloves, cinnamon and cardamom powdered)
2 tbsp lime juice
1/2 tsp cummin powder (zeera)
5 tbsp of yoghurt
Salt

Curry:

2 tomatoes puree in a blender
2 onions chopped
1 tbsp ginger-garlic paste
1 1/2 tbsp butter
3 tbsp cream
1 tsp chilli powder
Kisan Oil

Method :

Marinate the chicken in the marinade for 1 whole hour. Heat Kisan oil in a non-stick pan and fry the chicken for 10 minutes. Remove the chicken and keep it aside. In the remaining Kisan oil fry the chopped onions till golden, then add the ginger-garlic paste and fry ,sprinkle little water now and then ,till the oil separates. Add the chilli powder, tomato paste and cook for 10 minutes. Add the butter, cream and the chicken. Mix well and cook till done.

Chicken Sandwich

Ingredients

2 cup chicken boiled and cubes
11/2 cup mayonnaise
1tbsp lemon juice
1/2 tbsp ginger
1/4 cup onion
1/2 cup shimla mirch
salt and pepper to taste
4 salad leaves
sandwich bread

Method

Mix chicken , mayonnaise, lemon juice,ginger, onion, shimla mirch salt and pepper.keep it in fridge for 1 hr. on bread put salad leaves then chicken mixture,cover it with bread . serve it

Tuna Sandwich

Ingredients

1 can of tuna in oil
2 to 3 tblsp of fresh coriander cut finely
2 to 3 tblsp of green and red pepper cut finely
2 to 3 tbls of green onion cut finely
3 tblsp of mayonaise
1 tsp mustard
a pinch of all spices
salt
2 to 3 tbls of lemon juice
any kind of brown bread
fresh lettuce leaves
slice tomatoes

Directions

Strain the tuna from the can
Crush the tuna with a fork
Mix all the ingredients and stuff the bread with the mixture.

Baked Chicken :)

Ingredients:

1 chicken cut into 4 pieces
2 tea spoon red chili powder
1 tea spoon salt (or as per your taste)
2 table spoon lemon juice
cumin seeds powder
1 tea spoon paprika
4 table spoon oil

Method:

Mark cuts on the chicken.
Mix salt, chili powder, lemon juice, paprika and cumin powder.
Apply the mixture on the chicken pieces and marinade them for 2 hours.
Brush oil on both sides of the chicken and bake in a moderately heated oven for 20 to 25 minutes.

Chicken Sandwitch in Tikka Flavor

INGREDIENTS

1 Chest Piece of Chicken Meat
1 Tbsp Olive (Zaitoon) Oil
2 Cloves Garlic
1/2 of Onion
1/2 of Bell Pepper (Shimla Mirch) (Sliced Thinly)
1/2 of Tomato (Sliced Thinly)
2 Tbsp Chicken Tikka Masala mixed with 2 Tbsp Olive Oil
1 Pinch Salt
1/4 Tsp Black Pepper Powder (Kali Mirch)
1/4 Tsp White Pepper Powder (Sufaid Mirch)
1 Bread Roll
1 Tbsp Mayonnaise

Method:

Cut the Chicken into square shape pieces. Heat Oil and fry the chopped Garlic and Onion till Golden Brown and then add the Chicken pieces and Chicken Tikka Masala and fry well.
Add Bell Pepper and Tomato and mix.
Add Salt, Black and White Pepper Powder and fry well.
Cut the Bread Roll from center and spread Mayonnaise on it.
Place Chicken pieces and Cheese Slice in the center
Yummy Sandwitch is ready :D

BBQ Achari Chicken

1 INGREDIENTS

Step-1 Ingredients:
Chicken small pieces: 1/2 kg or 1 Lb.
Ginger garlic paste: 3 teaspoons.
Green Chilli paste: 1 teaspoon.
Kalonji: 1/2 teaspoon.
Sawnf: 1 teaspoon.
Laal mirch: 1/2 teaspoon.
Green cardamom (roasted and grinded): 3.
Oil: 1/4 cup.

* Step-2 Ingredients:

salt: 1/2. Red chili powder: 1tsp.
Roasted and grinded Zeera or cumin seed: 1tsp.
Garam masala: 1tsp.
white or black pepper: 1/2tsp.
Mango achaar masala: 2 Table spoon.
Vinegar: 1 Tbsp.
Lemon Juice: 2Tbsp.
Yoghurt: 1-2 Tbsp.
Orange food color: 1/2 tsp.

Method:

1. Marinate chicken with Marination Ingredients and leave for 10 to 20 minutes.
2. Then again marinate chicken with Step-2 Ingredients and leave for 1 hour in the refrigirator.
3. Grill in oven for 25 to 30 minutes or cook in a pot until chicken tenders.
4. Give smoke with coal.

Yummy Chicken Chargah :D

Ingredients:

Whole chicken – 1
Ginger garlic paste – 2 tbsp
Lemon – 3
Garam masala powder – 1 tbsp
Red chilli powder – 2 tbsp
Turmeric powder – 1 tbsp
Cumin powder – 1 tbsp
Red crushed chillies – 1 tbsp
Salt – to taste
Chat masala – for garnishing
Oil – for frying

Method:
Wash chicken and make deep cuts, then apply salt, ginger, and garlic paste and lemon juice. Now steam this chicken for 20 to 25 minutes, when done let it cool down completely. In same bowl (which we used for marination for chicken) put all dry spices in 1 tbsp ginger garlic paste. If mixture is a bit dry add 1 tbsp of oil and mix it well, then apply on chicken inside and outside and leave it for at least 10 to 15 minutes. Then take a wok and put oil, heat it up, then dip this chicken in hot oil with the help of a spoon, take 2nd spoon and pour hot oil on chicken until golden brown. Then take it out from oil. Yummy Chargah is ready to eat :D

Pepper Steaks

Ingredients:

1/2 tsp white pepper
1/2 tsp black pepper
1/2 tsp chilli sauce
1 tbsp oil
2 tbsp Worchester sauce
2 tbsp oyster sauce
2 garlic cloves
200 gms beef steaks
Salt to taste

Method:

Marinate beef steaks with the above mentioned ingredients for about four hours or overnight.
Heat oil in a pan and cook the steaks with marination till it is tender.
Serve with onion rings and chilli garlic sauce.

Bread Pizza

Ingredients:

¼ cup cheese
½ cup chicken (boiled)
1/2 tsp black pepper
1/2 tsp salt
2 tomatoes (medium sized)
2 capsicum (medium sized)
4 bread slices
4 tbsp chilli-garlic sauce
1 cup mayonaise

Method:

Shred the chicken.
Add mayonaise, salt and pepper to form a paste and spread it on the slices of bread.
Sprinkle grated cheese on the slices.
Now garnish it with slices of tomatoes and capsicums.
Bake for two minutes or until the cheese melts.
Yummy Yummy Bread Pizza is ready to eat :D

Chicken Spaghetti Bread Rolls

INGREDIENTS

Chicken (boiled and shredded) 1 cup
Mayonnaise 2 tbsp
Spaghetti boiled chopped fine 1/2 cup
Salt 1/2 tsp
Black pepper 1/2 tsp
Coriander leaves 2 tbsp
Green chilly chopped 2
Onion chopped 2 tbsp
Fresh bread slices 12


Method

1. Combine shredded chicken, boiled spaghetti, mayonnaise, green chillies, onion,
chopped coriander,salt, and black pepper in a bowl.
2. Cut the crust from bread slices.
3. Flatten the slices with a rolling pin and spread the filling on each slice and roll tightly.
4. Deep fry until golden brown and crispy
5. Yummy Yummy Rolls are ready to eat :D

Malai Tikka

Ingredients:

1/2 kg chicken pieces
Salt as required
2 tbsp oil
Malai or cream 1/2 cup
2 tbsp lemon juice
1 tsp ginger garlic paste

Method:

Marinate chicken pieces with all above ingredients & bake at 180 degree for 15-20 mins. Serve with onions rings, lemon slices and Parathas :D

Easy to Cook Coffee Cake

Ingredients:

Baking powder 3 tsp
Flour 2 cups
Eggs 2
Sugar (finely ground) 1/2 cup
Butter 125 grams
Instant Coffee 2 tsp
Water 1/2 cup

Method:

1- Grease 9" Pan and then dust with Flour
2- Preheat Oven @ 180 Degree
3- Mix Coffe and warm Water and set aside
4- Sift Flour and add Baking Powder in it
5- In a bowl beat butter for one Minute then add sugar and beat again till it becomes fluffy
6- Then add Egg in it ine by one and beat well
7- Add Flour and Coffee mixture turn by turn in small quantities and beat well
8- Once done, pour the batter in the pan and cook in oven for 20 to 25 Minutes.
9- Garnish with Coffee Syrup
10- Yummy Cake is ready :D

Pina Colada

Ingredients:

Pineapple chunks - 7 to 8
Soda Water - 2 Cups
Coconut Cream- 4 Table spoons
Icing Sugar- 2 Table Spoons
White Viniger - 1 Table Spoon
Ice Cubes - your choice :P

Method:

Blend Pineapple, soda water, coconut cream ice cubes and Icing Sugar.
Once blended add vinger and blend again.
Yummy drink is ready :D
Pour it in glass and serve, can use pineapple for decoration too.

Note: Can use Milk instead of soda water :D

Nuggets

Ingredients:

1/2 pound skinless boneless, chicken breasts (cut into 1/2 inch cubes)
Salt to taste
1 tablespoon Mustard Powder
1 tablespoon Black Pepper
1/2 Teaspoon Sugar

2 tablespoons Soy Sauce
1 tablespoon Vinegar
3 Eggs (Beaten)
Bread Crumbs
Cooking Oil

Method:

In a large bowl mix together vinegar , soy sauce, salt , mustard powder, black pepper , and sugar.

Marinate the chicken in the mixture for as long as possible.

Dip the chicken in eggs then bread crumbs and fry until golden brown.

Almond Filled Cheesecake

Ingredients

About 6 tablespoon of butter, well chilled, cut into 1/2-inch pieces approx
1 package chocolate wafer cookies – 10 to15 large size cookies
1 can almond filling (usually available on stores)
¼ kg cream cheese (usually available on stores)
3/4 cup granulated sugar
3 eggs
2 pints fresh strawberries, sliced for topping. You may also use sweet pineapple.

Method:

Finely crush chocolate cookies in food processor, using the pulse button. Cut in butter until mixture begins to gather together. Press crumbs into bottom of pan and up sides to 3/4 inch from top; make sure there are no cracks. Refrigerate crust for at least 30 minutes.

Meanwhile, preheat oven to 325 degrees F. Bake crust 10 minutes, cool.

Spread the crust with the almond filling.

In a large bowl, mix cream together the cream cheese and sugar until light. Add eggs, one at a time, beating well after each addition with electric mixer. Pour mixture carefully over almond layer, then bake about 65 minutes. Let cake cool for 1 hour, then refrigerate at least 5 hours.

Yummy Cake is ready :D

Bread Sweet Dish (Kheer)

Ingrediants:

1- 4 Slice of large bread
2- 1 Kilo Milk
3- Sugar as per taste
4- 3 Egg Yolk

Method:

A- Toast all 4 slices of bread and then crush them.
B- Add Sugar in 3 Egg Yolks and beat them well till it become fluffy
C- Boil the milk.
D- Once milk is boiled add the crush bread, stir continously on high flame. Cook for 4 to 5Minutes.
E- then add the Sugar and Egg yolk well beaten mixture.
F- Cook till it become thick.
G- Decorate woth crushed dry fruits.
H- Serve once its chill cool.
