Tuna Fish & Cheese Balls

This recipe was given to me by colleague and lovely sister Shahzadi Lubna.
It turned out sooo yummy that i added it to my regular cooking list (a must tea item as commented by my mother)
You can make these in any shape- I made Balls ^_^

Ingredients:
1 small Tin of Tuna Fish flakes (in oil) (Drain out the oil and use flakes)
1 large potatoes boiled and mashed,
Chedder cheese in fine julian cut (Kadu kash ke hoye) (Use tuna fish tin to measure and take 1 tin cheese)
1/4 tea spoon dry roasted and crushed white cumin
1/4 tea spoon dry roasted and crushed corainder seeds
3/4 tea spoon of red chili flakes (kuti lal mirch)
1/4 tea spoon all spice powder (Garam masala)
1/4 tea spoon white pepper
2 large green chilies finely chopped
2 table spoon finely chopped green coriander leaves
Salt as per taste.
1 table spoon corn flour only if needed.

For Coating:
4 table spoon all purpose flour (Maida)
1/4 tea spoon dry roasted and crushed white cumin
1/4 tea spoon dry roasted and crushed corainder seeds
1/4 tea spoon salt
1 egg

Bread Cumbs as required.

Method:
Mix all ingredients, mash with hands well.
Make balls or give any shape of your choice, if required then add corn flour.

Roll these balls in coating batter and then in bread crumbs.
Deep fry till golden brown.
Enjoy with hot cup of tea or coffee ^_^

Spring Rolls

I forget to take picture of Mixture will upload one after frying and cutting spring rolls for inside view :-)
For the time being uploading recipe on high demand :-)

For Chicken:
1/2 kg boneless chicken
1 tea spoon ginger paste (fresh)
1 tea spoon garlic paste (fresh)
1 tea spoon dry roasted and crushed cumin seeds
1 tea spoon dry roasted and crushed corriander seeds
1 tea spoon soya  Sauce
1 tea spoon BBQ Sauce (optional)
1 tea spoon red pepper flakes (kuti lal mirch)
2 table spoon lemon juice
salt as per your taste
4 table spoon yougart

Put all things in pan, cover and cook on low flame till water dries out completly.

For Noodles:
Optional if you want to add then boil half packet noodles with salt only.
Drain out wash with cold water, apply 1/2 tea spoon oil and add 1/2 tea spoon black pepper

For Vegetables:

On high flame
In pan take 2 table spoon oil
Add 1 cup julian cut band gobi
Add ½ cup julian cut carrots
Add ½ cup julian cut capsicum (shimla mirch) 
Black pepper freshly grounded 1/2 tea spoon
Soya Sauce 1 table spoon
Salt as per taste
Cook for 5 minutes.
Dish out and leave till they cool down. In case vegetables release some water then drain it.

Tips: 
Make sure your mixture is dry otherwise rolls will be soft and soggy. 
Also make sure that your vegetables are crunchy.
Assemble:
Mix cooked chicken (shredded), vegetables & noodles. Taste for salt & pepper if required adjust it.

Take Roll Patti available in market and give shape. Use egg to seal the ends.

Innovation:
You can add boiled shredded egg, mushrooms, cheese, spring onion if you want.
Use same mixture for bread rolls, simple take a bread slice, remove corners, flatten it, give shape of rolls, dip in egg, roll in bread crumbs and deep fry

Gol Gappy





Ingredients:
1 cup Sooji (Semolina Flour)
1/2 cup wheat flour
1/2 tea spoon salt
Water as required

Method:
Add salt, wheat floor and sooji together then pour water little by little until it turns into dough, the dough will be bit hard and tough but don't worry that's how it is keep on mixing until dough becomes soft takes about 4 minutes..
After the dough is ready roll it into thin chappati and afterwords take a cutter or something with a round shape to cut out the pieces and do make sure that the dough is rolled out very thin.
Now in a hot oil pan deep fry it.

Ingredients for water:
3 tablespoons tamarind paste (Imlee)
3 tablespoons lemon juice
1 teaspoon black salt
1 teaspoon salt (adjust to taste)
1/2 teaspoon red chilli powder
1 tablespoon cumin seed powder
4 cups water (adjust to taste).

Method:
Put all things in a pan and cook for 5 minutes on medium flame, let it cool and then place it in refrigerator for 15 minutes, it tastes good when it's chilled properly.

Filling:
Two potatoes boiled, skin removed chopped and sprinkled with chat masala

Potato cheese Kebab



Ingredients:
potato (boiled n mashed) - 2 big size
Cumin seed 1tsp full
Salt -to taste
Black pepper -to taste
coriander n mint leaves (chopped) mix2tbsp
cream cheese spread - 2tsp
for coating -egg n crumbs

Method:
mix spices n cheese with potato n mix well
make kebab,dip in beaten egg,coat in crumbs n shallow fry

Custard Cookies

I tried these last week and result was awesome :-)



Ingredients:
2 cups flour
half cup custard powder
half cup pure icing sugar
250g unsalted butter
1 tsp vanilla essence

Method: 

Bring the butter to room temperature. Pre-heat the oven to 180 degrees C.

If you have a food processor, mix the butter with icing and vanilla. Process for a couple of minutes or until well combined. You can use a hand-mixer.

Add the flour and custard. Pulse until JUST well combined. Do not over-process coz then your cookies won't have a fine delicate crumbly texture.

Shape as desired and bake on greased trays!

PS: I rolled teeny balls with my hands, placed them on the tray and flattened them slightly with a fork. Dip the fork in flour to avoid it sticking to the cookies.

The above quantity will yield around 44 to 45 cookies :-)

Coconut biscuits/cookies




2-3 level tblsp butter
1/2 cup sugar
4 tblps Honey
1 Egg
1 cup SR Flour (self raising)
Pinch of salt
vanila to taste
1 1/2 cup desicated coconut

-cream butter and sugar
-add egg- sifted flour-salt-vanila and coconut
-mix well,spoon on a greased tray
-flatten with a spoon
-bake at 18° for 10-15 minutes

You can use simple plain flour with 1tsp baking powder ,n u can use 1/2 tsp vanilla

Kalay Channay ke Chat

Ingredients:
1/2 kg kalay channay- washed amd soaked overnight with 1/4 tea spoon baking soda.
In morning wash them and boil them.
2 onions finely chopped
2 green chilli finely chopped
1 tomato finely chopped
1/4 bunch green corrainder leaves finely chopped
1 tea spoon ginger garlic paste
1 1/2 tea spoon salt
1 1/2 tea spoon red chilli powder
1 tea spoon roasted crushed cumin seeds
1/2 tea spoon all spice powder (garam masala)
2 table spoom lemon juice or imlee ke chatni

Method:
Take 1/4 cup oil, heat it.
Add onion, once it is transparent add ginger garlic paste.
Add tomatos, salt, red chili powder, bhoon lain.
Add boiled channay, Cumin powder, garam masala, green chilli- bhoon lain.
In end add lemon juice and green corrainder.

Mashed Potato Sandwitches

Me back after soooooooooo many days :-)
This is one of my fav for emergency serving with Tea :-)
Serve these with Chilli garlic sauce, Garlic Mayo or Green Chatni Thick Raita

Ingredients:
4 medium Boiled Potatos, mash them
2 Green Chilli, finely chopped
1/4 bunch green corriander finely chopped
1/2 tea spoon salt
1/2 tea spoon black peppre
Mix all these.

2 Eggs for coating
Bread Slices as required.

Method:
Remove cormers of bread slices.
Flaten them with roller.
Apply water with finger tips on corners.
Put the above batter on half slice and then close it like book.
press to close edges.
Dip in Egg.
Fry these like French toast with little oil.
You can also deep dry them.

Coffee Walnut Cake

Ingredients:

125 grams butter, at room temperature
125 grams caster sugar
2 eggs
125 grams white flour
1 tea spoon baking powder
2 table spoon coffee, dissolved in ¼ cup water
½ cup walnut halves

For Glaze:

200 grams Butter
200 grams icing sugar

Method:
  1. Beat the butter and sugar together with electric beater and then beat in the eggs, flour and baking powder.
  2. Beat in 1 tbsp of the coffee mixture and then add up to another tbsp little by little until the mixture drops easily off the spoon. Keep the rest of the coffee mixture for the icing.
  3. Stir in half the walnuts, snapping them in half as you drop them into the bowl. Spoon into the tin, level the top and bake for 40 minutes or until a skewer comes out cleanly. Cool.
  4. To make the icing, beat the butter until soft and then beat in 200g icing sugar followed by the remaining coffee mixture, little by little. Stop when you have a depth of color and flavor that you like. If the icing looks a little soft, beat in extra icing sugar.
  5. Cut the cake into 3 slices horizontally and then sandwich the layers together with some of the icing, you need a reasonably thick layer. Ice the top of the cake with the rest of the icing and decorate with the rest of the walnuts.

Chicken Shots




Tried these last weekend and result was yuumy can be used to serve with tea or add these in simple fried rice :-)

Ingredients for Chicken Marination:
1/2 kg boneless chicken cut into small cubes
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon mustard powder
1 table spoon chilli garlic sauce
1 table spoon lemon juice
1/4 tea spoon ajwain
1 table spoon white flour (meedah)
1/2 teaspoon baking powder.

Method:
Mix all these and leave in fridge atleast for 2 hours.

Ingredients for Liquid Batter:
2 table spoon white flour (meedah)
2 table spoon corn flour
1/2 tea spoon baking powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon white pepper
1 table spoon chilli garlic sauce
milk as required to form liquid battar of medium consistancy.

Dry Batter:
2 table spoon white flour mixed with 1/4 tea spoon salt and baking powder.

Method:
Dip the marinated chicken in liquid batter, roll in dry batter and deep fry.

Chicken Drum Sticks

This is one of my all time famous recipe, follow the instructions and you will end up with yummy drumsticks which everyone will love.

Ingredients:

6 chicken legs
1/2 tea spoon black pepper
1/2 tea spoon chat masala
1 table spoon chinese salt
1/2 tea spoon salt
1 small onion chopped
3 green chili chopped
3 slices of bread (remove corner)

Method:

- Boil the chicken and then remove the meat.
- Mash boiled chicken with hand and add black pepper, chat masala, chinese salt, salt, chopped onion, chopped green chili and white portion of bread slices mashed properly.
- Mix all this well and then coat on bones giving shape of drum stick.

For coating:

 Ingredients:

1 egg
2 table spoon white flour
1/2 tea spoon black pepper
1/2 tea spoon chat masala

Method:
Mix all ingredients then dip the drumsticks in this and deep fry till the coating gets good color.
Enjoy yummy drumsticks

Chicken Pakora

Ingredients:

1/2 boneless chicken cut in 1 inch cubes
lemon juice - 2 table spoon
Mutard Paste - 1 tea spoon
Red chili flakes - 1 tea spoon
Cumin seeds - 1 tea spoon
Besan - 4 table spoon
Salt - 1 tea spoon
Ajwain- 1/2 tea spoon
Rice Flour- 2 Table Spoon

Method:
Marinate Chicken with lemon juice, mustard paste, red chili flakes, salt, ajwain, sabat zera.
Leave for half hour atleast
then add besan & Rice flour to form coating if required add some water.
Now deep fry on low flame so that chicken is properly cooked.
Before taking out increase flame so that extra oil is drained.
Sprinke some chat masala before serving.

Cheese Onion Samosa

Ingredients:


For the dough:

1 cup refined flour
Salt to taste
Water as required

For the filling:
1 small bundle green onions, finely chopped
1/2 cup cheese grated
2 green chillies, finely chopped
1 teaspoon oil
Salt to taste
Oil for frying

Method:

For the dough:

Mix all the ingredients for dough and make a soft dough.
Cover and keep aside.

For the filling:
Heat oil in a pan.
Add chopped onions and fry till brown colour.
Add chopped chillies to it.
Fry for 3 – 4 minutes.
Let it cool for some time.
Add grated cheese and salt to the mixture.
Mix well and keep aside.

For the Samosa:
Divide the dough into five portions.
Roll out thin rotis
Warm the rotis for a few seconds on a tawa without oil.
Divide each roti into two parts.
Fill in the mixture and make triangles. Seal the triangles properly.
Deep fry on a medium heat.

Roasted Potatos

Ingredients:

6 ———- medium red potatoes, scrubbed clean, skins on
2 tbsp ———- olive oil
salt as per taste
1/2 tbsp ———- onion powder
1/2 tbsp ———- garlic powder
1/2 tbsp ———- dried oregano, crushed to release flavour
freshly grounded black pepper as per taste
2 tbsp ———- grated parmesan cheese (not the canned stuff)
2 tbsp ———- spoons filely-shredded sharp cheddar cheese

Method:

Arrange the whole red potatoes on a paper towel around the outer edge of the glass turntable in the microwave.
Cook on high for 8-9 minutes. They should still be a bit firm, not soft when you squeeze them. Let cool 10 minutes.
preheat oven to 425-F line a shallow baking sheet with non stick foil. slice the potatoes length wise in half and place cut-side up on prepared baking sheet sprinkle wih olive oil.
Use your finger to spread the olive oil over the top of each potato half so it is completely coated.
sprinkle with saly , onion powder, garlic powder, crushed dried oregano, pepper, Parmesan Cheddar.
Bake for 30 minutes until browned and crispy. Let rest 5-10 minutes before serving.

Nuggets

Ingredients:

1/2 pound skinless boneless, chicken breasts (cut into 1/2 inch cubes)
Salt to taste
1 tablespoon Mustard Powder
1 tablespoon Black Pepper
1/2 Teaspoon Sugar

2 tablespoons Soy Sauce
1 tablespoon Vinegar
3 Eggs (Beaten)
Bread Crumbs
Cooking Oil

Method:

In a large bowl mix together vinegar , soy sauce, salt , mustard powder, black pepper , and sugar.

Marinate the chicken in the mixture for as long as possible.

Dip the chicken in eggs then bread crumbs and fry until golden brown.
